A summer day in the year 2033. The sun is out, the air is clear. The smell of freshly cut grass. A few bikers passing by, and then the small, silent, self-driving e-bus, taking guests to the nearby lakes. The vegetable patch, the farmer’s garden in front of Rote Wand – it’s like a painting. The shapes, the colours! Alpine potatoes, chilis, scallions, maybe even tomatoes!
“We will also grow wheat,” Natascha explains. “And then we will make our own bread for the Bakery, the Arlberg’s most minimalistic café,” Joschi imagines.
Down in the lounge, the sheep’s milk cheese has matured for the past six years, and bacon from our farm for three. In the Culinary Lab, the “biochemical limits of food are tried and tested. Cultured meat is enhanced by cells that have been enriched by alpine essences.”
The Cookery School is filled with Friends and Fools. “Who’s here? Massimo Bottura!” Joschi imagines the scene in his mind’s eye. “Massimo discussing with young people from all corners of the world!” And Natascha continues, “And there will be residencies, people staying with us to write, make pottery and music and art!” And Joschi adds, “Wouldn’t that be amazing? Arts and food, they belong together! It’s all about joy and pleasure.”
