Over several days, dialogues blend with shared walks, meals and moments in between. Discourse and atmosphere don’t sit side by side, they intertwine. That’s where the quality lies: in proximity, in exchange, and in the openness to what unfolds.

Sebastian Jiménez (Ræst, Tórshavn, Faroe Islands)
Sebastian Jiménez is one of Northern Europe’s most exciting chefs. At the Michelin-recognised Ræst in the Faroe Islands, he explores one of the world’s most elemental cuisines, shaped by fermentation, fire, wind and the unique ingredients of the North Atlantic. His uncompromising approach combines tradition with contemporary gastronomy, making Ræst an international reference for modern Faroese cuisine.
